Ingrédients
  

  • 500 g meat (lamb or chicken), cut into pieces
  • 2 tomatoes ripe tomatoes, finely chopped
  • 2 pieces carrots, sliced
  • 1 branch celery, chopped
  • 1 piece onion, finely chopped
  • 2 cloves garlic, crushed
  • 100 g chickpeas, soaked overnight
  • 1000 ml chicken or vegetable broth preferably homemade
  • 2 tbsp olive oil
  • 1 tbsp ras-el-hanout Moroccan spice blend
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp dried mint
  • to taste salt and pepper
  • as needed fresh coriander, for garnish

Instructions
 

  • In a large pot, heat olive oil and brown the meat for about 5 minutes to release its flavors.
  • Add chopped onions, carrots, celery, and crushed garlic. Sauté for another 5 minutes.
  • Add the chopped tomatoes and cook for 5 more minutes. Stir in ras-el-hanout, cumin, and paprika.
  • Pour in the hot broth and add soaked chickpeas. Stir well and simmer on low heat for about 1 hour, until the meat is tender and the flavors meld.
  • Add dried mint, adjust seasoning with salt and pepper. If you want a thicker soup, mash some of the vegetables or add vermicelli or rice.

Notes

You can customize the soup by adding extra vegetables or adjusting the spice levels to your taste. It also stores well for a couple of days in the fridge!
