Instructions
Heat the vegetable oil in a wok. Add the diced chicken and cook for 5 to 7 minutes until golden. Remove from the wok and set aside.
In the same wok, add the onion, carrots, garlic, and ginger. Cook for 3 to 4 minutes until tender.
Add the cooked rice to the wok. Stir-fry for 3 to 4 minutes until the rice is well mixed with the vegetables.
Create a space in the wok and add the eggs. Scramble the eggs and mix them with the rice.
Add the soy sauce, sesame oil, hoisin sauce, and the cooked chicken. Stir to combine and cook for another 2 minutes.
Season with salt and pepper to taste. Garnish with fresh chives before serving.
Notes
Feel free to swap any of the ingredients or add more vegetables depending on what you have at home. The recipe is flexible!
