Ingrédients
  

  • 1 kg Beef Chuck
  • 3 pieces Carrots sliced
  • 2 pieces Onions sliced
  • 3 cloves Garlic chopped
  • 500 ml Vegetable or Beef Broth
  • 1 tbsp Herbs de Provence
  • 2 pieces Bay Leaves
  • 1 tbsp Tomato Paste
  • 1 can Canned Tomatoes 400g
  • 2 tbsp Olive Oil
  • to taste Salt
  • to taste Pepper
  • 4 pieces Potatoes cubed (optional)
  • 200 g Mushrooms sliced (optional)

Instructions
 

  • Brown the beef chunks in a pan with olive oil until browned on all sides. This adds flavor to the dish.
  • Place the browned beef into the slow cooker. Add the carrots, onions, garlic, canned tomatoes, tomato paste, broth, herbs, bay leaves, salt, and pepper.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  • If adding potatoes or mushrooms, add them in the last hour of cooking to keep their texture intact.

Notes

This recipe is great for making ahead of time and can be stored in the fridge for a day or two, with the flavors deepening. You can also freeze it for later.
