Ingrédients
  

  • 500 g Shrimp, peeled and deveined
  • 400 ml Coconut Milk
  • 1 liter Vegetable or Chicken Broth
  • 1 stalk Lemongrass, chopped
  • 4 leaves Kaffir Lime Leaves, torn
  • 2 tbsp Red Curry Paste
  • 2 pieces Fresh Red Chili Peppers, sliced
  • 1 piece Galangal (or Fresh Ginger), sliced
  • 2 tbsp Fish Sauce
  • 1 tbsp Sugar
  • 2 pieces Lime, juiced
  • to taste Fresh Coriander, for garnish

Instructions
 

  • Start by preparing the ingredients: chop the lemongrass, slice the galangal (or ginger), and slice the chili peppers. Juice the limes and set aside.
  • In a large pot, bring the vegetable or chicken broth to a boil. Add the lemongrass, galangal, kaffir lime leaves, and red curry paste. Let it simmer for 5-10 minutes to infuse the flavors.
  • Add the shrimp and cook until they turn pink, about 3-4 minutes.
  • Pour in the coconut milk and let the soup simmer for another 5-10 minutes to let all the flavors meld together.
  • Add fish sauce, sugar, and lime juice. Stir to balance the flavors. Adjust spice level by adding more chili or curry paste if desired.
  • Remove the kaffir lime leaves and lemongrass stalk before serving. Garnish with fresh coriander.

Notes

Feel free to swap ingredients like adding tofu instead of shrimp or replacing the herbs based on availability. It will still taste just as amazing!
