When winter arrives, there's nothing like a warm bowl of soup to heat you up. Simple to prepare, broccoli soup is both nourishing and full of benefits. It's rich in essential vitamins and minerals while being light. If you're craving a comforting dish that's easy to make, this soup is perfect.

Ingrédients
  

  • 1 head Broccoli about 500 g
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 medium Potato peeled and cubed
  • 1 liter Vegetable broth
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper
  • optional Crème fraîche for creaminess

Instructions
 

  • Wash the broccoli thoroughly and cut it into small florets. Peel the potato and cut it into cubes. Finely chop the onion and mince the garlic.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté for 3-4 minutes until translucent.
  • Add the cubed potato and broccoli florets to the pot. Pour in the vegetable broth to cover the vegetables. Let it simmer for 15-20 minutes, until the vegetables are tender.
  • Once the vegetables are cooked, use an immersion blender to puree the soup until smooth. For an even creamier texture, add crème fraîche at this point.
  • Season with salt and pepper to taste. Optionally, you can add some grated nutmeg or chili flakes for extra flavor.
  • Serve the soup hot in bowls, and optionally, top with grated Parmesan cheese. Enjoy with fresh bread or croutons!

Notes

Feel free to swap out any ingredients for what you have on hand. Adding spinach, zucchini, or peas can enhance the soup even more. You can also use coconut milk for a different creamy texture.
