Instructions
Wash and prepare all vegetables. Slice cabbage, carrots, and peppers, dice tomatoes, and finely slice the onions and garlic.
In a large pot, sauté the garlic and onions for 3 minutes to release the aroma.
Add all vegetables to the pot, then pour in the water and crumble the vegetable broth cube.
Add thyme and bay leaves, then simmer for 45 minutes, until the vegetables are tender.
Optionally, blend the soup for a smoother texture or leave it chunky.
Notes
Feel free to swap any vegetables in the recipe based on what you have available. The soup will still be delicious!
