Ingrédients
  

  • 1 head green cabbage about 800g
  • 2 medium carrots sliced
  • 2 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 liter vegetable broth
  • 1 tbsp olive oil
  • 1 leaf bay leaf
  • to taste salt
  • to taste pepper

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing for about 5 minutes until they become translucent and aromatic.
  • Add the carrots, potatoes, and chopped cabbage to the pot. Stir well to coat the vegetables with the oil and onion/garlic mixture.
  • Pour in the vegetable broth and add the bay leaf. Season with salt and pepper to taste. Cover the pot and let the soup simmer for 30-40 minutes until the vegetables are tender.
  • Taste the soup and adjust the seasoning if needed. Remove the bay leaf before serving.
  • Serve immediately and enjoy the warmth of this delicious cabbage soup. For an extra comforting touch, pair it with grilled bread or homemade croutons.
