Ingrédients
  

  • 4 pieces chicken thighs or breasts skin removed if thighs
  • 400 g canned crushed tomatoes or fresh homemade
  • 2 tablespoons olive oil
  • 1 medium yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 1 leaf bay leaf
  • 100 ml water or chicken broth
  • to taste salt and black pepper

Instructions
 

  • Prepare the chicken: remove excess skin from thighs or halve breasts for even cooking.
  • Heat olive oil in a large pot over medium heat. Brown chicken pieces for 3-4 minutes each side until nicely colored. Remove and set aside.
  • In the same pot, sauté sliced onion for about 5 minutes until soft. Add garlic, paprika, and oregano and cook 1 minute while stirring.
  • Add crushed tomatoes, water or broth, bay leaf, salt, and pepper. Stir to combine.
  • Return chicken to the pot, cover, and simmer on low heat for 30-40 minutes until chicken is tender and sauce is reduced.
  • If sauce is too thin, uncover and cook a few more minutes to thicken naturally. Adjust seasoning to taste.

Notes

Use ripe tomatoes in season for the best homemade taste. Add a pinch of sugar if tomatoes are too acidic. Marinade chicken with spices for extra flavor. Finish with a squeeze of lemon for freshness.
