Simple and delicious chicken croquettes with a crispy crust and tender inside. Perfect for family meals or snacks, easy to make and customizable to your taste.
Finely chop the chicken breast. Use a food processor but avoid turning it into a paste.
In a large bowl, mix the chopped chicken with salt, pepper, and paprika or herbs.
Prepare three plates: one with flour, one with beaten eggs, and one with breadcrumbs.
Shape the chicken mixture into small balls or patties. Coat each in flour, then egg, then breadcrumbs.
Heat the vegetable oil to about 180°C and fry the croquettes for 3-4 minutes until golden and crispy. Alternatively, bake at 200°C for 20 minutes, flipping halfway.
Notes
For extra crunch, replace some breadcrumbs with panko or add grated Parmesan. You can also customize with herbs, spices, or a cheese center.
