Instructions
Cut the beef into 4 cm cubes. Chop the onions and garlic, and slice the carrots. Clean and slice the mushrooms.
In the 'brown' mode, heat olive oil in the Cookeo. Brown the beef on all sides for a few minutes to develop rich flavors.
Add the onions, garlic, and carrots. Cook for about 5 minutes until the onions are translucent and vegetables release their aroma.
Sprinkle the flour over the beef and vegetables, stirring to coat everything. This will help thicken the sauce.
Add the tomato paste, bouquet garni, vegetable stock, salt, and pepper. Stir everything together.
Close the Cookeo and set it to 'pressure cook' mode. Cook for 35 minutes. This allows the beef to become tender and the sauce to thicken.
Open the Cookeo and add the sliced mushrooms. Continue cooking in 'brown' mode for an additional 10 minutes to integrate the mushrooms into the sauce.
Notes
Feel free to experiment with different vegetables, like turnips or parsnips, or even use wild mushrooms for an extra depth of flavor!
